Ok, this is huge. Why? Because I think in my whole lifetime of making this dip, I've shared this recipe with one person. The key to this dip is the second layer, which is what I've referred to as the secret layer and kept under lock & key until now.
A bit of back story .. this dip was one my mom used to always make. I have fond memories as a teenager chowing down on this dip during pool parties & BBQs. The origin of this dip is as a 7 layer dip. However, my mom never included the guacamole, hence bringing it down to 6 layers. I make it in her memory and true to the 6 layers I know and love. But, of course, feel free to add in the guac layer should your heart desire.
I love this dip for the onslaught of summer soirees. It's quick & easy, always a crowd pleaser, and not that bad on the health scale. This dip is also impossible to mess up and can be modified easily; I've made it vegan in the past; just substitute dairy-free ingredients (it's still pretty tasty, too!).

Nikki's 6 Layer Dip
2 cans of refried beans
1 cup mayo
1 cup sour cream
1 packet taco seasoning
1 can of sliced, black olives
1 small can of diced green chilis (can sub fresh chilis depending on your love of spiciness!)
1 packet Mexican shredded cheese
1 or 2 largish tomatoes
Layer 1: spread both cans of refried beans
Layer 2 (the secret sauce): combine the following to create the second layer: 1 cup mayo, 1 cup sour cream, packet of taco seasoning
Layer 3: Sprinkle shredded cheese
Layer 4: Add 1-2 large diced tomatoes
Layer 5: Sprinkle sliced olives
Layer 6: Add diced green chilis (I like the canned version because they add flavor versus heat. Feel free to add fresh, spicy chilis!)
There you have it! The most delicious dip you'll ever feast upon.
